Weekday Meals (3)

This will be my last post  on this theme for now! 

Here are some meals I typically pull out on weeknights. I make no claim that they are healthy or that you/your kids/your spouse/your cat will like them. This time, I’m not including recipes, but just some simple meals we keep in the backs our minds that most people are familiar with. 

– Tacos (beef usually, with tomatoes, sour cream and cheese)
– Quesadillas (usually with cheese, tomatoes, onions and jalapeños)
– Tostadas (baked tortillas topped with refried beans, guacamole, sour cream, and cheese)
– Nachos
– BBQ Hamburgers
– BBQ Chicken burgers
– Pancakes
– Waffles
– Grilled cheese sandwiches (make fancy for adults using jalapeño jack cheese. Mix together cream cheese, mayo and a bit of garlic powder).

  1. Tuna melts! On baked potatoes if I have time to cook them in the oven, on bagels if not, because microwaved baked potatoes are an abomination. With chopped green onion and pickled hot peppers in with the tuna mayo, avocado between the tuna and the potato, and tons of melted cheddar on top.

  3. There is a traditional savory (i.e. not sweet) corn bread that is a favorite in my home country, it's called proya.

    Preheat oven to 425.
    Mix:
    2 cups flour, 1 cup corn meal
    2 cups milk, 1 cup oil
    3 eggs
    1 lb of crumbled feta cheese
    1 teaspoon salt
    1 teaspoon baking soda
    (Optional: add tiny cubes of ham, between 1/2-1 lbs; I add ham when I serve for guests, for family I do the hamless version)

    Mix well and pour in large baking dish (lasagna or larger, it's better when the dish is larger so it's thin) and bake for 35 min.

    It's a good amount of food, probably enough for 8 hungry people.

  4. Fresh vegetables sautéed in olive oil with pasta and often a sprinkling of cheese is our go to! Also, ground chicken tacos.

  5. BBQ season will definitely be making life easier! We've done hot dogs, burgers, and steaks. I've got some marinated chicken and pork chops in the freezer too for when baby comes.
